Italian Sausage Frittata

Frittatas are one of my go-to weeknight meals. Not only do they bring me back to lazy weekend brunches, but they are also easy to throw together using whatever is in your fridge. And another plus? Eggs are cheap at Aldi and we are in the middle of a bathroom remodel – so cheap is good!

Italian Frittata

This frittata has an Italian spin with Italian sausage and herbs. I plan on serving this with marinara drizzled on top and  a simple spinach salad on the side. And of course some crusty bread.

Ingredients
4 egg whites
4 whole eggs
1 link Italian sausage, chopped
1/4 cup red onion, sliced thin
1 teaspoon Italian seasoning
1 teaspoon fresh basil, chopped
1 roma tomato, sliced
salt & pepper to taste

Pre-heat your oven to 400 degrees.

In a bowl, whisk together eggs and seasoning. Set aside.

In your 8-inch skillet, cook Italian sausage thoroughly. Add red onion and cook until just softened. Arrange sausage and onion evenly in the skillet and slowly pour over egg mixture. Cook on medium heat until edges begin to set, about 5 minutes. Carefully place tomato slices on the top of the eggs.

Place skillet in the oven and bake for eight to 10 minutes, or until center is cooked through.

Slice and serve with a simple spinach salad and toast!

Italian Frittata

Espresso and Almond Banana Bread

Weekends are for banana bread in my house. There is something about the smell of freshly baked banana bread that feels so warm and comforting. And since I am usually the first up on Saturday mornings I take the time to bake and use my French press for a good cup of coffee. So by the time my husband and son are up – the house smells like fresh bread and I’ve already enjoyed my coffee in a quiet kitchen. I get some alone time and they have fresh banana bread – we’ll my husband does since my son doesn’t have enough teeth yet.

The below banana bread recipe is actually healthy. The banana and apple sauce replace the need for oil and the butter is cut down to reduce the fat even further. But this bread by no means tastes healthy. And I like to add the espresso powder for some extra flavor.

And on a side note – this is amazing warmed up with some ice cream on top. Just saying!

Banana Bread

Ingredients:
1 1/4 cups unbleached all purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon instant expresso powder
3 bananas, mashed
1/4 cup unsweetened apple sauce
2 tablespoon butter, softened
1/3 cup brown sugar
2 large egg whites
1/2 teaspoon vanilla extract
1/2  cup almonds, chopped

Preheat oven to 350 degrees and grease a loaf pan.

Sift together flour, baking soda, salt and expresso powder in a medium bowl. Set aside.

In the bowl of a stand mixer, cream butter and brown sugar together. Add bananas, apple sauce, egg whites and vanilla. Slowly add in flour mixture and almonds. Mix until just combined.

Banana Bread

Pour batter into prepared loaf pan and bake 45 minutes. The bread will be done if a toothpick comes out clean when inserted in the middle.

Black Bean Burgers

My husband loves burgers but I am not always up for a heavy red meat patty so we compromise with black bean burgers. It is a healthy option that I can throw on a bed of spinach with avocado and he can enjoy between two pieces of bread (with cheese, BBQ sauce and caramelized onions).

And on the plus side its a quick meal – which is perfect for this weekend. Max is teething and refuses to sit calmly for more than ten minutes, which makes cooking (or anything) difficult.

Ingredients:
15 ounce can black beans
1/2 red pepper, diced
2 green onions, diced
2 cloves garlic
1/2 cup bread crumbs
1 egg, whisked
1 tablespoon ground cumin
salt & pepper, to taste
Avocado, sliced
1/2 cup shredded mozzarella

Begin by smashing black beans into a rough paste. Add all remaining ingredients and mix until thoroughly combined. You may want to add a bit more bread crumbs depending on how wet the mixture turns out. Form into four patties.

Heat oil or cooking spray in a pan over medium heat. Cook patties until warmed through, about three minutes per side depending on thickness.

Top patties with cheese and broil until melted. Add sliced avocado.

Chicken Bruschetta with Crispy, Garlic Cauliflower

Something amazing happened tonight, my 6-month old played contently by himself on the floor long enough for my husband and I to eat dinner – at the same time! This has pretty much not happened since he was born as one of us usually has to entertain Max while the other eats.  Luckily, I had planned something simple, yet delicious for tonight!

Which is where this bruschetta comes in. There is nothing better than fresh bruschetta. Tomatoes, basil and balsamic is the best combination ever – and this meal captures that perfectly.

The bruschetta can be made in advance and only gets better with time. You can of course make extra to top pizza, eggs, pasta or just about anything else you have in your fridge.  Or you can make extra to eat straight out of the bowl.

Ingredients:
2 chicken breasts
2 tablespoons olive oil
3 cloves of minced garlic
4 small tomatoes
1/2 tablespoon balsamic vinegar
8 basil leaves
3 cups cauliflower florets
salt & pepper to taste

Begin by heating the oil in a pan and browning the garlic. Remove from heat before the garlic burns.

Chop tomatoes and basil leaves – place in small bowl. Pour half of the olive oil and garlic into bowl. Toss with balsamic vinegar. Salt and pepper to taste. Set aside.

Pre-heat a grill pan and lightly season chicken to your preference. Simply grill chicken until cooked through.

For cauliflower, sauté over medium heat until tender – about eight minutes. For the last few minutes, add remaining garlic and oil. Adding the oil and garlic at the end ensures that garlic does not burn and become bitter.

Serve chicken with bruschetta on top, cauliflower on the side.
